Essentially there is no such thing as a Greek salad dressing recipe. The Greeks simply have the finest of oil (we know it as extra virgin oil oil) and wine vinegar on the table at meal times. They use it in a ratio of four times olive oil to one part vinegar.
The oil, from freshly pressed olives is so wonderful you can eat it on its own, or on bread which has been dipped in it(sprinkled lightly with salt). My mouth waters at the very thought of it!
However, they don't mix the ingredients in a bowl or jug prior to its use, they simply pour it from the bottle, or oil and vinegar dispensers. From infants, they grow up with these items on the table, and to them it is similar to the condiments of salt and pepper that northern Europeans have on their dinner tables.
If you are not keen on the idea of having a simple olive oil and vinegar dressing, here are a couple of recipes you can try as an alternative. There is also a video of a Greek salad being made with lemon juice instead of wine vinegar.
Fresh Basil Dressing
1 ¾ cups olive oil 1 handful fresh basil leaves, chopped Juice of 1 lemon Salt and pepper
Now, if for some reason...whatever it is, you are unable to have a wine vinegar in your diet, it is possible to substitute lemons as an alternative to wine vinegar.
